Marie Anderson's Zucchini Casserole

2 x large Spanish onions
2 x large zucchini
1 lb mozzarella cheese - shred
1 can tomato paste
2 c boiling water
sugar - heaping tsp
parmesan cheese
slice & saute onions in oil for 1 hour - don't brown.
Peel, cut and seed zucchini & quarter it in long slices. Layer bottom of oiled casserole w. zucchini. Sprinkle w. bread crumbs and parmesan cheese.
Add can tomato paste to onions w. 2 C boiling water & sugar. Cook for 5 - 10 minutes. Cover zucchini w. half of tomato sauce. Layer sliced m. cheese on top. Pour rest of sauce & sprinkle w. more cheese. Bake at 350° for 1 hour.
