2 egg whites
1/2 c sugar
1/4 tsp salt sub.
1 1/2 tbs. flour
1 tbs butter
1/4 c lemon juice
1 tsp lemon rind
1/2 c skim milk
Beat egg whites until stiff, then add 2 tbs sugar and beat stiff.
Combine salt and flour with remaining sugar in 1 quart bowl then rub in butter w. spoon. Add lemon juice and rind. Mix well and add milk. Fold in egg whites. Pour into 3 c baking dish. Place dish in shallow baking pan then set pan on oven shelf and pour boiling water into pan to 1/2 " depth.
Bake at 350° for 45 minutes.
